Most people think of '73-'74 as the band's jazzy period, and I agree. Good examples are mentioned above.

I think the single drummer thought of johnhaddad3rd is right on. Set 2 of 8/1/73 maybe Bill's "finest hour".

Personally I like when Branford Marsalis is in the band and I think my favorite is 9/10/91 (Bruce Hornsby too). Most times I reall like this show (an A, not A+), but sometimes I think there may be too many hands in the pot.
